I am a military mom with a husband on deployment. My little girl is 2 and I have a full time job. We don't get home from work and daycare unti l almost 6 in the evening. I want to cook her nice meals but find myself struglling because of a lack of time to do it. Does anyone have a suggestion or two to help me out? Thank you!

Make Brazilian rice. You can keep it in the fridge for 3 days.
I eat as it is the first day.
The second day I add frozen vegetable medley (small pieces)with butter to warm up.
Third day I make a stir fry.

Stir Fry rice
1 tbsp. oil
1/2 c. chopped onion
3 c. cooked rice
1/2 c. cooked meat, diced
1/2 c. leftover cooked vegetable such as carrots, peas, broccoli or green beans
Soy sauce, to taste

Heat oil in skillet. Saute the onion for a few minutes. Add the rice and stir to separate the kernels. Add the meat and vegetables and cook, stirring, just enough to heat through. Sprinkle with soy sauce. Makes 3-4 servings

Brazilian Rice
3 TBSP. Oil
3 to 4 Garlic Cloves - crushed
2 cups Rice - uncooked
4 cups Water
1 & 1/2 tsp. Salt

Put oil in a heavy pan and heat. Add garlic and cook until golden brown. Add rice and fry until it begins to turn brown. Add salt and water and lower the heat. Cover and cook 20 minutes without stirring. Add more water if needed. Brazilian rice should be dry and each piece separate.

You can serve it with beans, steamed veggies. Tomatoe salad. I love it with fried eggs! Always a salad.


Make a sauce of butter, crushed garlic, basil and oregano and pour over steamed broccoli and couliflower

I run into this problem every week especially when some nights we don't get home until 8pm.

You can make meals ahead of time and freeze them - than all you have to do is reheat them in the microwave.

But I like to keep my daughters meals simple - usually fish sticks, chicken patties, etc... with a vegetable.

We save more complicated cooked meals for the weekends when we are all home at normal hours.

Velveta Shells with Ground Beef:

1 box Velveta and Shells
1 lb. ground beef
Time: about 15 minutes

Follow the directions on the box for the Velveta and Shells.
While it's cooking, take a pound of ground beef, break it up in a frying pan, and cook on meduim heat. Add cooked ground beef to fully prepared Velveta and Shells. Mix thoroughly and serve.

It's best to use Velveta and Sells because it comes with a lot of cheese. You can also add tomatoes, dashes of pepper, chopped onions, or anything else you think might be good.

Beef stroganoff. Brown 1 pound ground beef, drain grease off. Put back on the burner, add 2 cans cream of mushroom soup. Heat to boiling, add 2/3 cup sour cream stir till hot. Spoon over rice or noodles,cooked of course. Yummmmm.

Get out the crockpot and start crocking. It is the best way and no fuss or hassel. You can find so many simple throw together recipes on the net for free also. Enjoy!

Time for the good old crock pot. You can throw in just about anything in the morning and it will be done for dinner. Here is a link with some recipes

Tater tot casserole is good.
Brown the hamburger, drain it, season it, add cream of mush soup. Add tots, bake until the tots are golden. Add cheese and bake until it's all melty. Yum!
