If its a rib eye or filet mignon medium, sirloin or tbone med rare. The thicker tougher steaks med rare, to insure they are juicy. The meats that are more tender, medium. Its all about balance!

I think that having it rare is a bit scary, but that having it medium or well just kills the taste.

Ohh I hate sirloin. Next cheapest cut to chuck. A good rib eye.. seared at 600 degrees and then cooked to a nice sliver of pink.. mmmmm tasteee... Say. . Isnt it lunch time?
