First of all, you can freeze it
Second, if you like mac & cheese you can use it for that.
In a saucepan, melt 4 tablespoons of butter and add 4 tablespoons of flour.
Cook this for a minute under medium heat to get the raw taste of flour out.
Slowly add 4 cups cold milk while whisking to make sure there are no lumps.
Cook this under medium low heat until it starts to thicken.
Turn off the heat and add 16 oz of grated cheddar to the milk stirring until it's combined.
Add this to 1 pound of cooked (not too soft because it will cook more) elbow macaroni.
Transfer to a buttered baking dish and place in preheated 375 degree oven covered with foil. - Bake 45 minutes.
Take off foil and add more grated cheese on top and bake another 15-20 minutes at 350 degrees until brown and bubbling.
Take out and let sit for 10 minutes - Enjoy

Yes, it can be frozen - for months. Besides the mac & cheese, you can make a white sauce with cheese and use it for au gratin potatoes or on veggies or make a cheddar cheese soup or potato/cheddar soup (sorry, my recipes aren't handy but there are plenty on the web). It also is a good salad topper!
6 cups may seem like a lot to you, but freeze most of it and you'll be surprised how quickly you'll use it up! And it thaws quickly.

You can freeze it or make: Cheese enchiladas
Warm 8-12 red corn tortillas in micro 1min until soft
Layer 2 pinches of shredded cheese in tortilla and roll.
Place rolls in small baking dish
Pour 1 med can of enchilada sauce over top.
Cover with any remaining cheese.
Bake 15 minutes uncovered in preheated 350 degree oven.
Serve with diced onions and diced tomatoes, sour creme and spanish olives on top. Yum.

go ahead and freeze it. But put it in 6 1 cup bags/containers. But make some nachos first because thats what I'm hungry for ( and it's only 10 am).

It can be frozen but when you take it from the freezer just place in fridge. Do not do anything to speed up the thawing process or it will get nasty. I have never done this but my sister does it all the time.

put it in an air tight bag--like a freezer zip lock--it takes quite awhile for cheese to go mouldy. use it up over the next 2 or 3 weeks.

heres a nice cheese soup recipe
1 stick butter
1 clove garlic minced
1 small onion
3 celery stalks
1 carrot peeled and diced
1/4cup flour
4 cups chicken stock(2 cans)
1 cup heavy cream
1/2 lb cheese..plus more for garnish
worcestershire sauce
hot sauce
bacon bits
chives
melt butter and add veggies and saute till wilted..about 3minutes stir in garlic and salt and pepper to taste..dust veggies with flour and cook for two minutes...whisk in chicken stock a little at a time...bring to a boil then reduce to a simmer...simmer for 45 minutes..remove and puree until smooth....strain into a clean pan..bring back to a simmer....whisk in cream...cheese....sauces....and salt and pepper to taste..ladle into bowls..top with bacon and chives and extra cheese......enjoy!!!

You can make chili and sprinkle cheese over top, you can make cornbread and sprinkle cheese in the mix, you can make tacos and pile the cheese on them.
