Beth's Spicy Oatmeal Raisin Cookies

"With a little experimenting, I came up with these chewy, spicy, oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good."

Original recipe yield: 3 dozen
US METRIC

INGREDIENTS
1/2 cup butter, softened
1/2 cup butter flavored shortening
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 cups rolled oats
1 cup raisins

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!

I made Oatmeal cookies when my mother was in the hospital the last time I was down to visit with her. I played around with her recipe and came up with a very moist one. I was able to duplicate it across 4 batches of cookies. Unfortunately I didn't write down what changes I made. So, what I'll do here is give you her original recipe and tell you what changes I made it to as best as I can remember.

RAISIN SPICE OATMEAL COOKIES

1 c flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 c butter
1/2 c brown sugar
1/4 c white sugar
1 egg
2 T milk
1 c raisins
2 c oatmeal
1/2 c pecans - chopped
1/2 c walnuts - chopped

Place raisins in a pan, cover with water and bring to a boil. Turn off the heat and let steep until room temperature.

Sift together the flour, baking soda salt, cinnamon and nutmeg. Set aside. Cream together the butter, brown and white sugars until totally incorporated. Add the egg and the milk and beat well. Strain the raisins (setting aside the water - you'll need a little of it). Add the raisins, flour and oatmeal. Mix until just mixed. Add about 1/8 cup of the water off the raisins. Mix until just mixed. Add the nuts and mix until just mixed. Place on sprayed cookie sheet and bake 375º for 12-15 minutes or until browned on top.

If you want a moist chewy cookie, find one with brown sugar either in place of white or with more brown than white. If you want a dry crisp cookie, make it all white sugar.

By steeping the raisins, they will end up nice and moist in the batter. By not steeping the raisins, they are hard lumps - some people like the hard lumps - I prefer the moister cookie with soft raisins.

Enjoy! My mother shared her cookies with the nurses in the hospital and they loved them.

Six Spice Oatmeal Raisin Cookies

Ingredients-
1 1/2 cups flour
1 teaspoon Spice Islands® Ground Saigon Cinnamon
1 teaspoon Spice Islands® Ground Nutmeg
1 teaspoon Spice Islands® Ground Ginger
1 teaspoon Spice Islands® Ground Cumin
1/8 teaspoon Spice Islands® Ground Cloves
1 dash Spice Islands® Cayenne Pepper
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1 cup brown sugar
1 cup sugar
1 egg
1 teaspoon Spice Islands® 100% Pure Bourbon Vanilla Extract
3 cups quick OR old fashioned oats
1 cup raisins

Preparation-
Preheat oven to 375 degrees F.
Combine flour, cinnamon, nutmeg, ginger, cumin, cloves, cayenne pepper, soda, and salt in a large bowl; set aside.
Beat butter and sugars in a large bowl with electric mixer until light and fluffy. Add egg and vanilla. Gradually add flour mixture, mix until just combined. Stir in oats and raisins.
Drop by level tablespoon 2 inches apart onto greased baking sheet. Bake 8 to 10 minutes, or until golden. Cool 1 minute on baking sheet before transferring to cooling rack.

My family and I always make the recipe on the Quaker oats tub underneath the lid!
