1 1/2 pounds blanched whole almonds
1 pound Brazil nuts
1/2 pound walnut halves
1/2 pound pecan halves
1 1/2 pounds pitted dates
1/3 pound red candied cherries
1/3 pound green candied cherries
1 cup all-purpose flour
1 cup white sugar
1 teaspoon baking powder
3/4 teaspoon salt
4 eggs
2 teaspoons vanilla extract
DIRECTIONS
Preheat oven to 275 degrees F (135 degrees C). Line two 5x9 inch loaf pans with greased parchment paper.
Combine the almonds, Brazil nuts, walnuts, pecans, dates, red and green cherries; mix well.
Sift together the flour, sugar, baking powder and salt. Combine with nut mixture and mix well.
Beat eggs and vanilla, add to nut and flour mixture and mix well.
Press into 2 lined loaf pans and bake for 1 1/2 to 2 hours. Set aside for 5 minutes and remove from pans. Completely cool on wire rack.

An easy icebox fruitcake recipe:
INGREDIENTS:
1 cup semisweet chocolate chips
8 tablespoons (4 ounces) butter
2 tablespoons milk
1/2 cup sugar
1/3 cup candied cherries
2/3 cup sliced almonds
2 tablespoons raisins
1 pkg. (sleeve, or 1/3 of a standard box) graham crackers
PREPARATION:
Line cake pan with a large piece of foil. Press carefully into pan as not to tear the foil. Chop cherries. Break graham crackers into small pieces in a bowl, add cherries. In a saucepan, melt chocolate chips, butter, and milk; stir over low heat.
Add raisins and almonds to the cracker mixture. Pour chocolate sauce over cracker mixture and mix well. Spoon mixture into cake pan and press more cherries on top. Cover cake with foil and press down firmly. Put cake in refrigerator to chill for 2 to 3 hours. Lift out of pan and remove foil. Store cake in refrigerator.

Christmas Fruitcake
Ingredients-
1/8 cup chopped dried cherries
1/8 cup chopped dried mango
1/4 cup dried cranberries
1/4 cup dried currants
2 tablespoons chopped candied citron
1/4 cup chopped pecans
1/2 cup light rum
1/4 cup packed brown sugar
1/2 cup all-purpose flour
1/8 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup unsulfured molasses
1 egg
2 tablespoons milk
8 tablespoons butter
Preparation-
Soak dried fruit in 1/4 cup rum for at least 24 hours. Cover tightly, and store at room temperature.
Preheat oven to 325 degrees F (165 degrees C). Butter and line with parchment paper a 6 inch round pan.
Whisk together the flour, baking soda, salt, and cinnamon.
Cream together the butter and sugar until fluffy. Beat in the egg. Add the flour in three batches, alternating with the milk and molasses. Stir in the fruit/ rum mixture and nuts.
Scrape batter into prepared pan, and bake for 40 to 45 minutes. Let cake cool in the pan for 10 minutes, then sprinkle with 2 tablespoons rum.
Place a piece of parchment paper, large enough to wrap entire cake, on a flat surface. Moisten a piece of cheesecloth, large enough to wrap the cake, with 1 tablespoon rum. Place the cheesecloth on top of the parchment paper, and unmold the cake on top of it. Sprinkle the top and sides of the cake with the remaining rum. Wrap the cake, pressing the cheesecloth closely to the surface of the cake. Place the cake in an airtight tin, and let age for at least 10 weeks. If storing longer, douse with additional rum for every 10 weeks of storage.

Applesauce Fruitcake
INGREDIENTS
1 1/2 cups white sugar
1 cup shortening
2 eggs
3 1/4 cups all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 cups chopped walnuts
1 1/2 cups raisins
1 1/2 cups dates, pitted and chopped
1/2 cup maraschino cherries, coarsely chopped
2 cups applesauce
6 maraschino cherries, halved
6 pecan halves
DIRECTIONS
Preheat oven to 325 degrees F (160 degrees C). Grease a 10 inch tube pan. Line bottom with parchment paper and grease again.
In large bowl, cream sugar and shortening until light and fluffy. Add eggs and blend well.
Lightly spoon flour into measuring cup; level off. Combine 1/2 cup of flour with nuts, raisins, dates and 1/2 cup cherries, stir until coated. Set aside.
Add remaining 2 3/4 cups flour, baking soda, cinnamon, allspice, cloves and salt to egg mixture. Blend at low speed until moistened, then beat 2 minutes on medium speed.
Fold fruit and nut mixture and applesauce into batter. Pour batter into a 10 inch tube pan. Arrange cherry halves and pecans on top.
Bake at 325 degrees F (160 degrees C) for 1hour and 15 to 45 minutes, or until toothpick inserted in center comes clean. Cool upright in pan 5 minutes. Turn upright onto wire rack and remove pan and parchment paper. Cool completely.
