have you seen that book seinfeld's wife wrote? sounds kinda like what you have tried, but it also looks like she had some great ideas and recipes.
worth a shot?
i think there are some vitamins that you could give her also to be sure that she is getting all the vitamins/ nutriment she may be missing out on.

try giving veggies as a snack instead as part of the meal.
If it is a reward or something fun she may decide that she likes them more than the carbs. I had to do this with my son he hated veggies but now he eats them no matter what I put in front of him. What kind of veggies are you trying? what colors? I found that the brighter the color the more fun they think it is...try red bell pepper instead of green it looks like a party and not a veggie.

It sounds like she may have some texture issues. You should continue to offer the vegetables without mixing them in or hiding them her regular food. Then, puree some vegetables and add them to her regular foods (like the Jessica Seinfeld book). Or, you can blend them in with some good smoothies and serve at the beginning of the meal. Then, you can insure that she won't fill up on just carbs. Also, you can offer some dips like cheese sauce, ranch dip, ketchup, Nutella, just make sure she consumes the veggies in addition to the dips.

My son is 16 months old and he has started doing that too. In the beginning, even when he first started eating real food he would, but now he won't. I just keep offering them to him..sometimes when he thinks I am not looking he will eat some of it just not very much.

my son loves veggies but he didn't when he was about your daughters age. i finally tryed a little bit of ketchup and that worked and i know that sounds gross but trust me kids love ketchup at any age! my ped recommended it and it does work. try also adding butter to it and maybe some bacon bits because that makes them smell different. don't do the frozen veggies either because kids hate the texture of them. try the canned ones and if ketchup doesn't wwork try some velveeta over them to hid colors and maybe she'll eat them.. remmember kids are all about texture and they won't eat what feels weird in their mouths. always put the veggie first also and wait to see if she'll eat those and then give the rest of the food after she has started to munch on the veggies..its all about what goes on the plate first also..remember if its waxy in your mouth then they won't eat it at all

My son was the same way. As long as you keep offering them, you are doing your job. Eventually she will give in and get curious and try them and she will decide what she likes. Just keep offering the veggies. She will give in. Offer many different types of vegetables. She will have to decide what she likes and doesn't.

Just keep offering them. Maybe give her only veggies for a few meals until she takes them. At some point she'll realize they taste yummy.
Or you might just cut them out completely for a few days and reintroduce them later.

Keep giving them to her. Don't hide them in food or do anything sneaky, and don't pressure her to try them or anything. Just offer her a balanced plate of food and let her chose what she wants to eat. Also, pick up odd vegetables or try to make usual ones in different ways. At that age, my daughter LOVED baked squash and mashed sweet potatoes....weird, huh? They say kids have to try something 10 times before they will accept it and learn to eat it. You've got plenty of time! Also, some meals she'll scrap the plate clean, and other times you'll give her the exact same dinner and she'll call it "yucky". She'll eventually give in and try the veges. :)

kids are like pets--they'll keep doing the same things as long as they can get away with it & there is no punishment so instead of making her go hungry which i'm sure won't help her mood make it like a game---show her you eating a veg then a carb--she has to be rewarded---then eventually work it to two fork/spoonfuls then 1 carb & continue to the point where the carbs wont be part of the regular meal--best of luck

Just keep on trying (without forcing), give her a multi-vitamin, and an otherwise well-rounded diet. Eventually your hard work will pay off.
