Tomorrow is my wedding anniversary and I'm looking for an EASY recipe to make for a romantic dinner. I know I'm making stuffed mushrooms for an appetizer and probably chocolate covered strawberries for dessert but I need ideas for the main course.

Pasta and Cauliflower

Ingredients-
1 head cauliflower, broken into small florets
1/2 cup olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon chopped fresh parsley
1/4 teaspoon garlic powder
salt to taste
ground black pepper to taste
2 tablespoons grated Parmesan cheese
1 pound spaghetti


Preparation-
Cook pasta in a large pot of boiling salted water until al dente.
Meanwhile, steam frozen cauliflower until tender. Alternatively, break cauliflower into flowerets, and steam until tender.
Heat olive oil in a large skillet. Add onion and saute until golden. Add garlic, and saute until golden brown. Stir in cauliflower and seasonings.
Drain pasta, and transfer to a large serving bowl. Toss with onion and cauliflower mixture, and top with cheese.

You'll be amazed how easy my ROAST CORNISH GAME HENS are, and they look great on the plate.

Cook up a pot of rice pilaf by sauteeing 1/2 onion, a handful of pecans, and a cup of dry rice. When the rice is browned a bit, add 2 cups chicken stock, some herbs, a splash of white wine, and simmer. Let it cool a bit.

Wash and pat dry two small cornish game hens (available frozen, even at Walmart!) Stuff the insides with as much of the rice as you can get in there.

Now rub the outsides with butter. Butter the rice that's sticking out. Shake on some salt, pepper, and a seasoning blend (herbes de provence, or italian seasoning). Roast at 325 for an hour or until the juices from the leg run clear. Try to baste them once or twice during the roasting process.

Serve with a nice side of veggies, like steamed green beans with butter.

If you have a slowcooker try chicken cacciatore, it requires very litte prep work and can be served w/ spaghetti or angel hair pasta on the side. Here's a recipe that uses a jar of spaghetti sauce to make it even quicker: http://allrecipes.com/Recipe/Slow-Cooker-Chicken-Cacciatore/Detail.aspx
For something even easier a lot of stores now sell stuffed chicken breasts or pork chops where all you have to do is bake them and add some veggies on the side.

This is an easy question: It's my go to dinner when I want something nice but quick and easy.

Grilled lamb chops: massage them with olive oil, season with salt pepper and thyme and grill.
Asparagus wrapped in prociutto: Steam your asparagus so they are still bright green and crunchy, wrap in prociutto and serve.

Rice cooked in chicken broth and season with parsley: Make as usual, using chicken broth instead of water; add a couple of tablespoons of chopped parsley. To make it a little more elegant, oil the inside of a ramekin , press the hot rice into it and then invert onto a plate to make a timbal, sprinkle with a little more parsley.

This dinner is so easy, yet very elegant and will go perfectly with your appetizer and dessert.

Oysters to start - all you have to do is open them Salmon baked in foil with herbs, new potatoes + steamed asparagus with quick hollandaise sauce (just put all the ingredients except the butter in a blender, whizz it, melt the butter and add to blender while whizzing, is very quick + easy but looks impressive) Has to be Chocolate Mousse for pud, better made the day before (and stick a slurp of brandy in it). Don't forget the candles - have a great evening.

Since every one is mentioning pasta I will give my input. The easiest pasta dish that is still real nice and cheap is:

1 PKG of Breaded Chicken Patties
Mozarella Cheese
Thin Spaghetti Noodles
Your Fav Spaghetti Sauce

Just microwave or bake the chicken patties cook the noodles and heat up the sauce. It is easy and it is actually pretty good. I think it is a version of Chicken Parmesan

How about a nice roasted Chicken

1- 5lb chicken
sprigs of rosemary and thyme
1 stick butter
1 orange cut in half
1/2 head garlic
1 med onion
6 slices bacon
preheat oven to 425
rinse the chicken with cool water then pat dry....using half of your rosemary and thyme...finely chop...then add to your stick of softened butter..then spread this all over your chicken...then sprinkle all over with salt and pepper put the remaining herbs along with the orange...garlic...and onion into the cavity of the bird...tie the legs...place slices of bacon over the breast ..place in oven for 25 minutes....the remove bacon and baste with pan juices...cook for another 25 minutes to brown the skin...should be a total cooking time of an hour or till165 degrees on your thermometer.....let sit for ten minutes so juices can redistribute..then enjoy!!!not only is this a delicious meal...gives you a little time to enjoy a glass of wine with your man!!!

SAUCY STEAK SPECIAL

1 ½ lbs. round or family steak
1 Tbls cooking oil (your choice)
½ cup chopped onion
1 10 ½ can tomato soup
½ cup water
¼ cup sherry
1 Tbls cornstarch
2 Tbls Worcestershire sauce
2 tsp soy sauce

Cut meat into serving size or bite size (my preference) pieces. Brown in oil in large fry pan. Add onion and cook until tender.

Stir in soup, water and sherry.

Combine cornstarch with Worcestershire sauce and soy sauce. Add to meat mixture and blend well. Simmer, covered, about 1 ½ hours until meat is tender, Serve over noodles or rice. Check seasoning, may need some salt.

I would buy some cooked peeled shrimp and cocktail sauce. You can feed each other. If you don't like fish, I would buy two steaks (T-bone or your favorite) and grill them. I love a juicy steak. Happy Anniversary!
