I spread the filet with a thin layer of mayo... this keeps it very moist, but you won't taste the mayo. Then I top that with buttered breads crumbs, parsley, and Parmesan cheese. I bake it at 400 for 12 minutes.( depends on size of the filet) We eat a lot of fish because we live near the ocean and two large lakes. This recipe is one of my family's favorites for fish.

Just bake at about 375F for about 15 or 20 minutes. I usually prepare a shrimp creole type sauce (cooked shrimp added to canned chopped tomatoes that have been sauteed on the stove with chopped green onions and some cayene pepper). I pour it over the cooked orange roughy and it is absolutely delicious.

You spelled it correctly (that makes you instantly better than 75% of the people here who couldn't get a sentence right if it meant the firing squad), and I usually broil orange roughy with a little lemon juice and garlic -- some people also use butter but I need to watch my cholesterol...

Baked. Pre-heat oven 350
Using Foil to make packets.
Sheet of foil spray with oil then doing sliced veggies. Onion, Bellpeppers, even squash if you like. Top with Fish add pat of butter(or spray butter), lemon juice, salt & pepper. Fold foil in to a packet bake on a cookie sheet for 20 mintues at 350.
Low fat & moist.

Make a tin foil packet, place the fish, a dab of butter, and a few lemon slices in it. Seal it up and bake it for about 20 minutes at 350 degrees.
Be careful opening the packet - steam will come out.

Baked or grilled its good
350 degrees glass pan combine butter enough to cover your fish and keep it moist. salt and pepper
two or three thin slices of orange over the fish a few rings of white onion. Bake until you have a good color and meat is flaky.

FYI, we ended up pan-searing ours, with just a little salt and pepper. We used Wasabiyaki (made by Soy Vay) as a dipping sauce, and it was great!
