Some recipes say need it for only a minute and some say knead about seven minutes. What is the difference if i knead only one minute then if i knead it for seven.

the longer you need the bread dough the more you develop the glutton more glutton means a firmer stronger texture. less glutton means softer more cake like bread.

kneading develops glutton (protein from the flour) to make a chewy well structured bread. If you knead until the dough is smooth and elastic (usually anywhere from 5-9 minutes) you will be good. anything less and the bread will be dense and heavy as the glutton has not been thoroughly developed and will not rise as much as kneaded dough. The more elastic the more it will stretch and rise

It depends upon the consistency of the bread in the end.

When on kneads for a long time, this is usually for a loaf bread. The shorter times are for a softer bread.

Kneading is good therapy and exercise.

Your bread won't rise very well without kneading it for at least 7 minutes. It is a very important step when making bread.
