DO NOT BE FOOLED, THE CADILLAC IS NOT GARAGE BAND. Garage band is an extremely simple and limited program to make the everyday person beleive they are really making music, and you will not find it anywhere in "professional" studios. If price is no option, your two best bets are Digidesign Pro Tools, or Pro Logic. Pro Tools can run on both PC and mac, but Logic only runs on macs. As far as surround capabilities go you would just need an interface with at least 6 outputs, preferably 8, so you can even do 7.1 mixing. These are pretty much the two main programs in the industry and account for probably 90% of the post-production facilities. Another tip is this, if you don't have calibrated monitors and the correct layout, as well as a 1/2 live 1/2 dead room, you won't have the desired effects. Look into specs of a surround mixing setup as well. hope this helps.

For professional 5.1 mixing, Protools is the industry standard, although you have to be using an HD rig which will easily cost you $10k+ for the hardware and cards. There are other standalone programs with 5.1 mixing capability that work equally well (if not better) such as Logic and Nuendo, which will cost you under $1k. You could use any 8-channel IO for monitoring.

If you go with Protools, I would definitely look into Neyrinck Audio's encoding software. If you're using anything else, I would look into DTS's Master Audio Suite, which creates encoded streams up to 7.1, BluRay and HD-DVD (as well as all their previous formats). It's around $1500.
