when someone dies in an accident/fire and theres not much left of the torso and their torso is in bits, what goes into the coffin when they get buried?

I had the sad job, on a few occasions while serving in the
RAF, of picking up pieces or remains of dead pilots bodies from air crashes.

This was before DNA tests were availble, the remains, whatever they were, were identified as far as possible, put into coffins and the weight made up with sand, they were treated with the same respect as if they were whole.

The sealed coffins were then given to the next of kin who either had them burried or cremated depending on the deceased's wishes.

Whats left of them. But they may not bury them in a coffin. Why not cremate and spread the ashes somewhere?

their remains - however small, insignificant and whatever bits are available. I know it seems odd but its true.

well all of there remains my cousin is a mortician but most of the time they are cremated
