Most of the carbohydrates consumed in a meal are used to produce ATP. Some are used to store energy (by conversion to fatty acids for storage in adipose tissues). Some are used to modify proteins (glycoproteins) and lipids (glycolipids). Overall, their main 'function' is energy production.

Best wishes.
