Have you not heard of the 'Hammond Virus'? Apparently it wiped out thousands back in the late 60's early 70's. It was finally eradicated by the 'Yamaha Polyphonic Synthserum' sometime in the late 70's.

It really doesn't get much better that this great performance by Keith Emerson with ELP:

Another one of my favorite Hammond B-3 soloists was Jimmy Smith. He was awesome!

Here's a cool Jimmy tribute by 'The Tony Monaco Trio'

And there's always Vincent Crane:

Edit - I tried to post this answer the other day, but Yahoo wouldn't let me for some reason. Sometimes Y!A is fussy when it comes to links I guess. So I saved this answer as a draft, thinking it might post properly at a later time. I was right!

Check out "Fifty/Fifty" by Frank Zappa & The Mothers.

Some truly awesome B3 work on that track. It's kinda a parody of the styles of big bands of that era like Deep Purple and their ilk, but the musicianship, as always with Zappa's material, is outstanding. One of the few tracks where you can hear a Hammond, a guitar and a violin trade solos. Mind blowing stuff :) Enjoy !!

Felix Cavallerrie(sp?) on Good Lovin
Ray Manzarek on Light My Fire
and
AL Kooper on Like A Rolling Stone
are some of my favorite pieces of B-3/Leslie work

My favorite Hammond solos are from Jimmy Smith. His creative interpretations are like Jimmi Hendrix on the guitar.

"Sister Ray" Velvet Underground, White Light/White Heat, truly pushes the boundaries of the instrument itself. Not to mention the recording being so far into the red that you wonder if your speakers are blown!!!!!! God loves the original speaker cabinets that came with these relics of a former era.
