After being sentenced to death, why do some many inmates continue to stay on death row, in max security prisons, on the state's dime?

The appeals process takes a long time, though most states take quite a while to complete the executions even after appeals are exhausted.

depends on the crime and if the person on death row there lawyer will try to hold out as long as possible

Appeals. The only person I can think of that when to their death quickly was Tim McVey.

While it's true that they HAD to have taken or abused someone else's constitutional rights to get there, it would be "unconstitutional" and inhumane to actually clear the cells out any faster *please note the sarcasm*.
