An old story goes about a goose that laid golden eggs.'Could not say boo to a goose' conveys one could not separate himself from a person from whom some large benefits were expected.
The words 'as white as a sheet' are used to describe someone in the grip of fear,extremely scared or panicked .In such situations people loose the radiant colour of their faces which turn ashen.

Don't know about #1. #2, this one just means you were startled to find her pale. "As white as a sheet" - she was really pale in the face.
