First of all, the word is "manor".

Second, assuming this isn't some bizarre riddle or joke, you are, presumably, referring to workers of English or similar estates (i.e., manors). As such, they were almost never referred to as "peasants", at least not in front of them, and certainly not in polite company (you didn't use the word "castle" or "kingdom", so that bears out).

Third, being "bound" to a manor implies that they worked there (willingly or not!). As such, their referenced name depended on the job they performed and/or their position. The manor's residents would never refer to them as, say, "butler" or "maid"; instead, they would be referred to by their first name, as they were considered part of the "estate", if not as members of the family, as some were, as opposed to indentured servants. A collective name would be "servants" or "staff" (contrary to one of the responses, above, the word "serfs" - - a derivative of "servant" - - was used to denote peasants from the middle ages; "serfs", as a rule, had no position in the castle, proper).

I think it would depend on what manners, i.e. English manners, french manners, etc. they were practising. Peasants working for a manor (estate) would be servants, serfs or, more specifically, butler(s), maid(s), etc.
