Because they are doing 1 of 3 things.

1) they are occurring along subduction zones which form a line.

2) they are a result of a plate moving across a hot spot (mantle plume) creating a line or chain of volcanoes.

3) they are occurring a long a mid-ocean ridge, which forms a linear structure.

Maybe two big plates are moving apart and the hot molten core of the earth is bubbling up to the surface.
