I use it twice in one sentence, and I *can't* think of an appropriate replacement for either one:
"Outside of my studies I have developed a deep interest in animal rights and ethics, developing a particular commitment to the greyhound industry,"

Sometimes, the good ol' thesaurus fails all of us. In these cases, it's best to change the structure if you can. Here's a couple of options;

"Outside of my studies I have a keen interest in animal rights and ethics and have developed a particular commitment to the greyhound industry,"

"Outside of my studies I have developed a deep interest in animal rights and ethics. I am particularly commited to the greyhound industry,"

"Outside of my studies, my interest in animal rights and ethics has grown. Over the last ? years/months, I have developed a particular commitment to the greyhound industry,"
