I would like to know how I would go about telling him what a great teacher he is.
I want to show the utmost respect, in a way that is culterally pleasing to him. Thanks for any help you can give me.

I think a great note or a card with a personal note will be appreciated. I've kept things like that I've gotten over the years from students because they were so meaningful.

I agree--after the course is over and the grades are turned in (so there won't be any question about your motivation!), write him a note telling him that you enjoyed his course, and why. So few students take the time to do that, you'll probably make his whole semester!
