I am putting a sub-panel and found out the main panel don't have a ground bar or ground anywhere. This is an old building, so can I just bolt & nut my subpanel ground to the main panel casing.

Yes..The grounding bars(lugs) in the sub-panel can be connected to the case of the box,.IF....the common wires are not... Then the grounding bar is run to earth using a grounding cable & rod or connecting the cable to a water pipe which goes to earth.

Can you ... sure, but it wouldn't be to code.

A ground is a safety feature that I personally would want to have. Why would you not fix the problem now that you know it exists. It's not that difficult to drive a ground rod and connect it up.

if you "ground" the sub panel to an ungrounded main panel then the system is still ungrounded.....

time for a seperate ground wire to a rod into the earth......

You need to use a ground rod.
