There are so many ways!
Grill it with a lemon and mustard sauce, or use herbs and the teeniest splash of white wine (or skip it if you don't want the calories)

Boil it for really tender, succulent meat, then serve with steamed vegetables or potatoes

BBQ it and serve with fat free natural yoghurt, chives and other herbs as a sauce.....

.....The list goes on! But chicken isn't unhealthy, as far as I know its generally considered a healthy meat option. Even with an oil spray (just a tiny bit so it doesnt stick to the pan, then allow it to cook in its own juices is also ok on occasion)

OMG... so many people think chicken isnt healthy!!
dark meat is fattier than white meat... chicken breast is the leanest chicken you can get, and you can get it anywhere
definitely DONT fry it! you can put it in the oven or a toaster oven and just cook it til it's done
for best results put it on the grill outside
