I want to make a spinach & artichoke dip.

I always do, because you want to remove any preservatives that might have been used when canning the artichokes.

As a note: make sure that the artichokes are DRY before adding them to your dip. In other words, wipe each with a paper towel before adding or let them sit in a colander until the excess water has evaporated. (Don't worry if there is a bit of moisture, but try to get the excess off.)

Yes you should rinse off the water and also dry the artichokes on paper towels. You don't want liquid going into the dip because it will make it watery and thin which causes separation.

No, because if you like the taste of the artichoke, the water would rinse it away. but on the other hand if you want a clean taste and want to look and be clean about it then I would, especially if you are having guests over.

I've found it's always best to rinse off the preserving liquid before using them in recipes.
that way you can add seasoning to your taste and be confident it will be good!

yes, in the can they have preservatives to keep the food from spoiling, always rinse food when you take it out of a can(of course when possible) :)

yes, always rinse fruits and vegetables. to washes out the chemical and fertilize residual.
