you could try spraying him with water everytime he does it. My cat doesn't really eat it she just chews on it. Its annoying. Both my cats like to climb up it. I pretty much just gave up on it last year.

Put the tree in a room with a door that can be closed to keep the cat out. It's the only 100% way to keep him from eating the tree other than not having a tree at all.

Beware! I had a cat that I could not keep from eating the plastic liners in my trash can. One day I came home and he was throwing up something terrible. He had eaten plastic and I had to rush him to the emergency vet where he was operated on! I learned the hard way to keep plastic away from him. A very expensive lesson!!! The plastic was lodged between his stomach and intestine and nothing was passing through.

My cat does the same thing, but except ours is a real tree O.o anyways.
Every time we caught her eating the tree we sprayed her with water. Then pointed at her and firmly said "NO!"

... or you can put some plastic in his food bowl

You could try to squirt him with a water bottle, but what happens when you leave the house? He chews the tree. Try some Bitter Apple spray on the tree. It tastes horrible to pets and won't hurt them. It should discourage him. You can buy it at any pet supply store.

Spray the tree with some kind of citrus air freshener.

get some bitter apple spray and put it on the plastic.

See if you can spray it with that stinky stuff that keeps cats away from furniture.
