She already doesn't think very highly of him, but it is getting better, and I don't want this to ruin it. He cannot come due to a black belt test in tae kwon do which he has been working on for 4 years...and it's my birthday trip

If your mother doesn't realize that people outside of your family might have lives of their own, and things to accomplish, she is very shallow...
I dont' understand why she would be affected if your boyfriend did not take the trip...
Tell her the truth -- he has a test which he's been working toward for a number of years... if your mother can't accept it, it's her problem....
she's not dating him anyway, YOU are..
