I have a recipe for 7-Up pound cake from "Wild about Texas" cookbook that I've made numerous times. I personally don't have recipes for other sodas, but I'm sure they're out there. The Sprite is easily substituted for 7-Up or ginger ale. I'm not sure I've ever had colas in baked products, but definitely with meats.

Ingredients
1 1/2 cup butter, softened
2 cup sugar
4 each eggs
3 cup flour
2 tablespoon lemon extract
3/4 cup 7-up
1 confectioner's sugar
Directions:
Cream butter and sugar until smooth. Add eggs, one at a time, beating well after each addition. Add flour, lemon extract, and 7UP; mix well.
Pour into greased angel food (or bundt) pan. Bake 325 degrees for 1 hour and 15 minutes or until done.
Sprinkle with confectioner's sugar.

YES YOU CAN!!! and its delicious! ive had an orange crush cake, a dr. pepper cake and a hawian punch cake. they actully sell them in the stores. they had a 7-Up variety, but i didnt try it because i assumed it would just taste like a lemon cake.
Ive never tried to make one before, but i would think youd make it the same as the 7-up cake recipe, but substitute whichever flavor of soda you like for the 7-up. the ones i tried were a bundt cake and were glazed with icing.

(just a note: sprite is a lot like 7-up so i dont think there'd be much difference in flavor for that one)

Coca COla Cake
2 cups self-rising flour
2 cups sugar
3 tablespoons cocoa
1 cup Coca-Cola
1 cup butter
1 1/2 cups miniature marshmallows
2 eggs, beaten
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract

Frosting:
1/2 cup butter
1 tablespoon cocoa
6 tablespoons Coca-Cola
1 box confectioner's sugar, (1pound)
1/2 cup chopped pecans
Grease and flour a 9 x 13-inch pan and set aside.
In a large bowl combine flour and sugar. In a saucpan combine the cocoa, Coca-Cola, butter, and marshmallows; bring to a boil. Combine the boiled mixture with the flour and sugar mixture.
In a separate bowl mix eggs, buttermilk, baking soda, and vanilla; add to the first mixture.
Pour into prepared pan and bake at 350 degrees for about 35 minutes, until cake tests done.
Frosting: In a saucepan, bring butter, cocoa, and Coca-Cola to a boil. Stir in the sugar and mix well. Stir in nuts. Spread over the cake while both cake and frosting are still warm.
Root Beer Float Cake
INGREDIENTS
1 (18.25 ounce) package yellow cake mix
1 (12 fluid ounce) can or bottle root beer
1/4 cup vegetable oil
3 eggs
1/2 cup confectioners' sugar
3 tablespoons root beer
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
In a medium bowl, stir together the cake mix, 12 ounces root beer, oil and eggs until smooth. Pour batter into the prepared pan.
Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool cake in pan for 15 minutes before inverting onto a wire rack to cool completely. Poke holes in the cake with a skewer at 2 inch intervals. Pour Root Beer Glaze evenly over cake.
To make the Root Beer Glaze: combine the confectioners sugar and 3 tablespoons of root beer in a small bowl. Beat until smooth.

Not sure why you couldn't, although not sure what kind of a taste you'll get with the "more heavy" pops. But go ahead and try, just replace the 7up with whatever trips your trigger.
