The best Exclusive games that have come out for the PS3 in my opinion are:
Resistance Fall of Man
Heavenly Sword
Uncharted Drakes Fortune
Warhawk
As for non-exclusives, I guess Call of Duty 4 and Assassins Creed are the best.
