I am trying to cut down on the sugar and oil in the baked goods I make such as breads, pies and cakes. Anyone know what is a good substitute for oil and/or sugar and how much should be used?

For sugar, you can use Splenda which is a sugar substitute that can be used just like sugar. You can even buy it in one pound bags in the supermarket since it measures like sugar. In addition, health food stores also sell turbinado sugar which a lot of healthy bakers use instead of white sugar.

As for oil, it is usually used to add moisture to baked goods. To replace it, you can use something like apple sauce (which is common).

Ingredients 2 cups all-purpose flour 2 cups white sugar 3/4 cup unsweetened cocoa 2 teaspoons baking soda 1 teaspoon baking powder 1/2 teaspoon salt 2 eggs 1 cup cold brewed coffee 1 cup milk 1/2 cup vegetable oil 2 teaspoons vinegar Directions 1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. 2.In a large bowl, combine the flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center and pour in the eggs, coffee, milk, oil and vinegar. Mix until smooth, batter will be thin. Pour into prepared pan. 3.Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

applesauce will moisten baked good like oil does and also add sweetness. It's great to bake with and there are many recipes you can find on the web to accomodate the substitutions!!

Splenda for the sugar and canola oil for the oil.
