I'm not sure if you are referring to the instant puddings, or a type that is cooked. However, I've used whipping cream (the type that gets beaten, not the type in the aerosol can) for this. Don't over-beat the cream. The chocolate pudding tasted close to chocolate mousse, although I used half whipping cream and half regular whole milk (mixing the milk in after the cream had been whipped). Of course, it's higher in calories, too.

I guess you could, but it would be "heavier" than milk. I think I'd thin out the whipping cream with some water - maybe 1/4th water and 3/4ths whipping cream.
I'm guessing you have it left from Thanksgiving and can't think of anything you want to use whipped cream on. I could recommend topping hot cocoa with whipping cream or using it as a base for a fruit salad or on fruit shortcake! Personally, I'd find a better use for the whipping cream than in the pudding, unless you're out of milk and want the pudding!

The type from the can would be OK and the liquid variety would give you a richer pudding. Just let the stuff from the can relax in your measuring cup and you can even add a little water if you don't have enough liquid. There is a lot of air in that can.
