I would suggest you leave it if you did an Upgrade Download.
If you have the Original Install Disk for CS3 then you could Delete CS2 and then Install CS3

If you upgraded, you should not delete it. If you installed the whole program, which is more likely, you can delete it. It is a good idea to create a restore point before deleting any major program.

Just to make sure, move it to a different folder first, then try to run your new applications, if it runs with no problem. it will be safe to delete it then.
You can do that with any applications or progams
