It isn't space or anything like that.
Cocktail recipes are made to take into account a certain amount of ice melt based on the liquor being room temperature. Fill the glass with ice and let it sit while you are mixing the drink then pour the drink into the chilled glass. You get the right amount of dilution and keep it at the right temperature.

Good question.
When I drank, I use to put my alcohol in the freezer - as long as it was not something mixed with cream, etc. like Baileys.
Alcohol does not freeze and I found that it was much better than adding ice cubes as ice cubes will water down the drink.
I think that there are a few reasons why people leave their alcohol out.
1. It is much easier to access - especially if you have a large variety in your bar.
2. I think that ice cubes are more like garnishes for many people. Nowadays, you can make fancy ice cubes etc.
3. Out of habit. It is so much easier to say "I'll have a Scotch on the Rocks" instead of "I'll have a Scotch straight up."
I do keep my Brandy out at room temperature and in the bar where it is easily accessible in case of a medical emergency.

Most people don't drink often enough to keep alcohol cold all the time and would rather keep the fridge clear for food. If I am having a party I will put the bottles on ice so they stay cool longer but I rarely have anything but a bottle of Champagne regularly refrigerated.

It helps keep it better to drink at a moments notice, but if you don't put it fridge it's not like it will go bad. It's a matter of taste more than anything. As long as it's stored at room temp, and the cap is still on the bottle, you'll be okay.

Because it takes up too much room in the fridge and some alcohols may be consumed at room temperature or on the rocks.
Some people like to keep vodka in the freezer. I do that when I have room for it (which is rarely!)

That's a good question.
I know some people like their scotch/brandy/cognac, ... without ice, not cold. So I'm guessing some liqueurs are better at room temperature, yet the average of people don't know about it and put ice into it.
Then you have vodka, gin, etc that I personally find better cold, and they go well in the freezer since they don't freeze. They don't get stronger when kept in freezer.

I store some booze in my freezer because liquor does not freeze.
But it can be stored anywhere as long as it is capped, And I don't know about you but my alcohol cabinet would not fit in my fridge.

I refirdgerate all of mine. Wiskies make a better drink when mixed cold. they cdon't melt the ice in the drink and water it down. I chill ALL the ingredients of my mixed drinks
