Zuppa Toscana Soup like Olive Garden's®
Serves: 10
Prep. Time: 0:35
1 lb. spicy Italian sausage - crumbled
1/2 lb. smoked bacon - chopped
1 qt. water
(2) 14.5 oz. cans (about 3 2/3 cups) chicken broth
2 lg. russet potatoes - scrubbed clean, cubed
2 garlic cloves - peeled, crushed
1 med. onion - peeled, chopped
2 cups chopped kale OR Swiss chard
1 cup heavy whipping cream
salt and pepper - to taste
In a skillet over medium-high heat, brown sausage, breaking into small pieces as you fry it; drain, set aside.
-In a skillet over medium-high heat, brown bacon; drain, set aside.
-Place water, broth, potatoes, garlic, and onion in a pot; simmer over medium heat until potatoes are tender.
-Add sausage and bacon to pot; simmer for 10 minutes.
-Add kale and cream to pot; season with salt and pepper; heat through.
Notes: I am currently on a low-carb diet (Atkins) and I have substituted cauliflower in place of the potatoes and you can't even tell the difference.

Olive Garden Zuppa Toscana
This is one classic you do not want to miss. You may wish to add a half teaspoon of fennel seed to this.
1 1/2 C. spicy sausage links -- 12
2 medium potatoes, cut in half lengthwise, and then cut into 1/4" slices
3/4 C. onions, diced
6 slices bacon
1 1/2 tsp. minced garlic
2 C. kale leaves, but in half, then sliced
2 T. chicken base
1 qt. water
1/3 C. heavy whipping cream
Methods/steps
Preheat oven to 300 degrees. Place sausage links onto a sheet pan and bake for 25 minutes, or until done; cut in half length-wise, then cut at an angle into 1/2 inch slices.
Place onions and bacon in a large saucepan and cook over medium heat until onions are almost clear. Remove bacon and crumble. Add garlic to the onions and cook an additional 1-minute. Add chicken base, water, and potatoes, simmer 15 minutes. Add crumbled bacon, sausage, kale and cream. Simmer 4 minutes and serve. Makes 8 servings.

OLIVE GARDEN ZUPPA TOSCANA
Mock recipe
Ingredients
1 lb Ground Italian sausage
1½ tsp Crushed red peppers
1 Large diced white onion
4 tbsp Bacon pieces
2 tsp Garlic puree
10 cups Water
5 cubes Chicken bouillon
1 cup Heavy cream
1 lb Sliced Russet potatoes, or about 3 large potatoes
¼ of a bunch Kale
Preparation
1.Sautee Italian sausage and crushed red pepper in pot. Drain excess fat, refrigerate while you prepare other ingredients.
2.In the same pan, sautee bacon, onions and garlic for approxiamtly 15 mins. or until the onions are soft.
3.Mix together the chicken bouillon and water, then add it to the onions, bacon and garlic. Cook until boiling.
4.Add potatoes and cook until soft, about half an hour.
5.Add heavy cream and cook until thoughouly heated.
6.Stir in the sausage.
7.Add kale just before serving. Delicious!
