"A distilled beverage is a consumable liquid containing ethyl alcohol (ethanol) purified by distillation from a fermented substance such as fruit, vegetables, or grain. The word spirits generally refers to distilled beverages low in sugars and containing at least 35% alcohol by volume. Absinthe, baijiu, brandy, gin, rum, tequila, vodka, whisky, and traditional German schnapps are types of spirits. Distilled beverages with added flavorings and a relatively high sugar content such as Grand Marnier, Frangelico and American style schnapps are generally referred to as liqueurs. Fortified wines are created by adding a distilled beverage to a wine. The term liquor may mean spirits; spirits and liqueurs; or all alcoholic beverages, including wine, sake, beer, and mead."

Generally spirits refer to drinks with a high alcohol level, like at least over 30% so it generally refers to hard liquor. Beer and wine typically don't have such a high level. Considering that in latin "spirit" has to do with one's breath, or the breathing of life into someone or something to animate it, (one's spirit) the association with the word has to do with the livelyhood that alcohol elicits. Back in the dark ages (in europe mind you, where the word spirits is used to this day, not so much in the us) when alchemists were trying to find the elixir of life and stuff like that, they would note the considerable effects alcohol would have on living creatures, experiment with it and associated the term then.

The term comes from times when the English and French came to North America. They traded furs for whiskey and other forms of hard alcohol. They referred to the substance as "spirit water" since, in the native belief, being drunk allows you to see the spirits of your ancestors and the gods.

As part of the whisky making process, after the mash bill is fermented, what is left for distillation is called wine (believe it or not). It is at this stage that the alcohol is "spirited" or distilled from the wine, hence the proper industry term "wine spirit". After this process, the whisky is ready for casking into either used bourbon oak or sherry barrels.

Alchohol can be divided into 3 catagories: Beers, Wines and Spirits. A "Spirit" is anything alcholoic that would not be catagorized as a "beer" or a "wine" (and wine doesn't just mean grapes - elderberry wine, etc.).

Beers are brewed. Wines are fermented fruits. Generally speaking, spirits are "distilled".
