7-Up Layer Cake With Coconut Pineapple Frosting Recipe
Ingredients:
2 sticks butter
1/2 cup vegetable shortening
3 cups sugar
5 eggs
1 teaspoon lemon extract
3 cups all-purpose flour
7 ounces bottle 7-UP, room-temperature
1 can (16 oz. size) crushed-pineapple, undrained
1/2 cup butter
1 1/2 cup sugar
3 tablespoons flour
2 eggs, beaten
1 can coconut
Directions:
For Cake: Cream butter, shortening and sugar together. Add eggs one at a time, beating well after each addition. Add lemon extract. Add portions of 7-UP and flour alternately, beating well after each addition.
Bake in greased 10-inch tube pan at 300 degrees for 1 1/2 hours or until cake tests done. Top cake with coconut frosting while hot. Serve cake hot or cold.
For Frosting: Put all ingredients into a saucepan. Cook together, stirring frequently as it thickens. Remove from heat. Add coconut and blend well.
7-Up Cake Recipe
Ingredients:
1 1/2 cup butter
4 eggs
1 tablespoon lemon extract
2 1/2 cups sugar
3 cups flour
3/4 cup 7-Up
Directions:
Grease and flour a bundt pan. Preheat oven to 325 degrees. Cream butter and sugar; add eggs one at a time and beat well. Mix in extract, flour and 7-Up. Pour batter into prepared pan.
Bake for 1 to 1 1/2hours or until cake tests done. Allow cake to cool on rack for about 20 minutes before inverting. Allow cake to completely cool before placing on a cake dish.
7 Up Cake Recipe:2nd version
Ingredients:
1 package White or yellow cake mix
1 package Lemon jello
4 Eggs, beaten
1/2 cup Oil
1 cup 7-Up
Directions:
Pour 7-up into a cup slowly to retain bubbles, but not have a lot of foam on top.
Put all ingredients into mixing bowl and beat two to three minutes at medium speed. Pour batter into greased and floured tube pan.
Bake at 350 degrees 45 to 60 minutes until cakes tests done and barely begins to pull away from sides of pan.
Glaze cake if desired, or sprinkle with powdered sugar.

Classic 7 UP Pound Cake
This recipe has been around for years and, judging from its popularity, it will be around for many years to come.
1 cup butter, softened
1/2 cup shortening
3 cups sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
5 eggs, at room temperature
3 cups all-purpose flour
1/2 teaspoon salt
1 cup 7 UP
For the Glaze:
1/4 cup 7 UP
1/2 cup sugar
Preheat oven to 300°F. Grease and flour a 10-inch tube pan.
Combine butter, shortening, sugar, vanilla and almond extract in the bowl of an electric mixer. Beat until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition.
In a separate bowl, combine the flour and salt, and add to butter/sugar mixture alternately with 1 cup 7 UP, beating well after each addition.
Spoon batter into prepared 10-inch tube pan, and bake for 1 hour and 45 minutes, or until cake tester comes out clean. Cool in pan on a wire rack for 10 minutes, then invert on serving plate and remove pan.
While cake is cooling, make the glaze by stirring together the 1/4 cup 7 UP and 1/2 cup sugar in a saucepan. Bring to a boil over medium heat, and boil 1 to 2 minutes or until sugar is completely dissolved. Punch holes in top of warm cake with a toothpick. Spoon glaze over cake, and cool completely before serving.

This recipe is from my Prescription for Cooking Desserts from the Hospital Auxiliary Members of the Montgomery Baptist Hospital Auxiliary in Montgomery, Alabama. The cookbook is now out of print but it has some absolutely wonderful recipes in it - from wonderful home cooks.
This particular recipe is from Mrs. Bob W. White, President of Childress Co. Hospital District Auxiliary in Childress, Texas. She may still be alive (the cookbook was made in 1967). But if she isn't, then she will live on in her recipes.
SEVEN-UP CAKE
3 c sugar
2 sticks margarine or butter
1/2 c Crisco
5 eggs
3 c flour
1 (10 oz) bottle Seven-Up
3 tsp lemon extract
2 tsp vanilla extract
1 tsp almond extract
Cream sugar, margarine or butter and Crisco. Beat in 1 egg at a time. Alternate flour and Seven-Up. Add extracts. Beat well. Put in greased and floured tube pan. Bake in 325º oven for 1 hour and 30 minutes. Cool in the pan. Serves 15.
(In today's world, you can use butter in place of the margarine and Crisco if you'd like.)

I see there are many contributions to this question. Doesn't hurt to look at one more. This one is very tasty.
1/2 cups unsalted butter, at room temperature
3 cups sugar
5 eggs, separated
3 cups all-purpose flour
3/4 cup lemon lime soda
3 teaspoons lemon juice
Preheat the oven to 325 degrees F.
Grease a 10-inch tube pan and dust with flour.
In a standing mixer fitted with the paddle attachment, cream the butter until fluffy. Slowly add 2 cups of the sugar and mix until just incorporated. Raise the speed to high and mix until light and fluffy. Add the egg yolks, 1 at a time, until incorporated.
Reduce the mixer’s speed to low. Alternately add the flour and soda until a smooth batter is formed. Transfer the batter to a large bowl.
Clean the bowl of the mixer and place the egg whites inside. Using the whisk attachment, whip the egg whites until foamy. Add the lemon juice and beat until soft peaks are formed. Add the remaining sugar and beat until stiff peaks are formed.
Working in 3 batches, using a rubber spatula, fold the egg whites into the batter.
Pour the batter into the pan and bake until golden brown and a toothpick inserted in the center comes out clean, about 50 minutes to 1 hour. Allow to cool completely about 2 hours, then unmold and serve.
