Quality.....On everything I buy!!

Quality, mostly, but many cheddars can be quite good and reasonably priced (at least in WI, I'm having a heck of a time finding good cheddar here in NV). I will NEVER EVER buy Kraft cheese for any reason. *gag* I like mild WI cheddar the best, because I'm not much of a cheese eater, relative to others I know.
Oh, and I prefer to buy my cheese direct from the creamery, another thing you can't do in NV :(

certainly quality is the key factor to purchasing a cheddar, or any cheese for that matter. I am a huge cheese fan and really love the mild English cheddars. I also find that cheese is best consumed at room temperature. By bringing out a cheese a little before you want to serve it and allow it to come to room temperature you will really experience the cheese as it is intended - with all the subtle layers of flavors.

I guess I would say both.....I normally look at the size package of the cheese and then the price and determine if I am getting my money's worth.....

If a good off brand cheddar cheese has more and a cheaper price than say Kraft....I will get the off brand because 9 times out of 10 it tastes just as good

Quality, i go with Cabot cheese products. they are so amazing. try this:
wheat bread, sharp cheddar cheese, a slice of tomato, and Italian spices, make a grilled cheese. it is good! make sure when you put it in the skillet you cover it with a medal bowl or something that wont melt, it is very hard to melt sharp cheese this is the best way i have found to do it. enjoy!

Quality... Actually, I rarely pay for cheese as I am a notorious gourmet food thief.
Imported Roquefort Blue is one of my favorites and sells for about $34 per pound, I can't pay that much for cheese!
Try pilfering some Irish "Dubliner" white cheddar, usually about $12 per pound... No cheese tastes as good as stolen foreign cheese!

Quality is a good choice but it really depends on what you are going to be using it for too. For an additive in 50lbs of Mac & Cheese----well quanity first. See my point?

For eating cheese with bread and wine I go for quality.
When making mac and cheese the cheap chedder works good for us.

I guess both. I only buy Tillamook extra sharp in 2 pound blocks, then shred it myself at home. It seems expensive at first, until you realize it ends up being cheaper (and better) than preshredded bagged stuff.
