I have one word YUP! do this all the time. prepare as you would for zucchini

And another thing you can use that you would NEVER think to do is use a CUCUMBER!! My hubby (when I was visiting with my parents) found a cucumber in the fridge, thought it was a zucchini (I didn't have any in the fridge at the time), and boiled and buttered it. There were some leftovers when I came back home, I heated it and other than the skin was just a little firmer than a zucchini (more like an older zucchini), it tasted JUST LIKE zucchini.

I found you can also saute radishes in butter and they will taste like a mild turnip. And if you steam Romaine lettuce, it tastes like a mild spinach.

New ideas for things you thought only went in a salad!!

One more thing. The last time I went to make carrot cake, I didn't have enough carrots so I add zucchini to the carrot cake recipe, replacing half the carrots. Boy did it turn out nice and moist. The ladies in my card group wanted me to make it again with half carrots/half zucchini. And they are true carrot cake lovers so that's got to say something. Makes it nice and moist.
