The air fares to Perth seem to stay the same all the time. But get more expensive over Christmas, which i what I have been looking at, it is actually cheaper to fly to NZ from Brisbane than to fly to Perth

If you shop around on the internet for cheap flights you can get some good deals from Sydney to Perth. Flights from Newcastle to Sydney are the same price all year round but you might be lucky with advance purchase.
Usually the longer it is between the time of booking and the time you want to fly, the more cheap seats are available but you have to hunt for them. You will get a better deal if you are flexible with dates and times.
