If I connected my playstation 3, into my Hitachi TV, a plasma on-wall tv, would it harm/damage it in any way?

As long as you have enough cable of either HDMI or Component so as to not put strain on the TV's connectors, not the PS3 will not harm your television.

Short answer: Not usually a problem if you take some precautions.

Yes: a plasma TV in a bar, turned to 100% brightness showing ESPN for 18 hours per day will get the ESPN logo burned into the screen.

In your home:

- Turn down the brightness and contrast so you are not in showroom-torch mode. Use a setup DVD like Avia or "Digital Video Essentials" to correctly set the values if you want to do it right.

- Play a modern video game (not Pong, Mario from a PS2) where you have thousands of colors with lots of shades, not just black and white or an old 16 color system.

- Do not marathon play for 10 hours each day and only play the same game. Play something different or just watch TV to mix it up.

Just use common sense and you will have a great time and not damage anything.
