If you are Catholic and intend to raise your child Catholic -- which of course would mean you'd be bringing that child to Mass every Sunday, etc. -- then you can have your child baptized in the Catholic Church even though you are not married in the Church and your husband has no intention of joining the Church. You might consider having your marriage blessed so that you can resume receiving the Holy Eucharist.
I'm afraid I cannot understand your husband's reasoning that the "long process of acceptance" is bad. For Catholics the "long process" is for HIS acceptance of Catholicism -- not the Church's acceptance of him. They'll take anyone who knows they really want to be Catholic, but how would a person know unless they studied a bit?

I'm betting a local Unitarian minister would be willing to Christen your baby.
Also, although baptism is a sacrament it does not have to be performed by an ordained minister of religion. Any believer can do this so long as the form is correct.

People who are only willing to invest a "minimal" effort in joining a denomination are only going to make a "minimal" effort being members of that denomination.
God wants us to love Him with ALL our heart, ALL our mind, and ALL our Soul. That means giving it ALL our effort, not just a minimal effort. Take from this what you will.

Call your local parish. As far as I know, if you are a practicing Catholic and you promise to raise your children Catholic they can be baptized in the Catholic church.

There is Calvary Chapel. They are a conservative Christian church with no membership procedure. The congregation comes and goes as they please. They would probably allow you to dedicate your child, but they will not baptize until it is old enough to repent and understand what he/she is doing.
