no, i haven't heard that one yet. But it's funny that u raise that subject b/c i was just asking a friend of mine the other day, why don't we eat horses? I mean we eat pigs, cows, goats, dear, chickens and kinds of other animals, but why not horses? I'm not saying that i would eat a horse but i don't understand why we don't.

I once had a contract job at a liquid gas plant in Algeria, got my self an apartment and set off shopping at the local market.
My Arabic was very poor, as was my French, but I thought I could compensate for this by yelling at the top of my voice and flapping my hands around a lot?
I came across a meat stall, all looked nice and clean, steaks, meat joints, sausages etc.
I did my shouting and hand flapping and came away with a good selection, all very cheap.
BBQ that evening , the steaks were great, I had a couple of friends we had more than a few beers , it all went down well.
One of these friends was French, we had settled on the verandah, chatting and watching the sun set.
The French guy asked "You like horse"?
I had never given it a thought, I neither liked or disliked horses, I indicated that I couldnt care less one way or the other!!
He continued to babble on, I was thinking this guy has had too many beers!
Then as if to justify my assumption , he said some thing along the lines of "We French like horse, if you no like horse why you eat"???
I maybe had a few beers too many also, I thought I had better humor him, he was my boss!
I was explaining that I eat because I am hungry, he was looking at me as if I was a mental case!
I thought it was time for more beer, we supped it looking at each other with deep suspicion , he had another go!
"If you not like horse why you eat horse steak and sausages"???
I sat there, beer almost to my mouth, staring at this feller, it all came to me in a flash , the market stall had a picture of a horse above it, I thought maybe the stall holder had a racehorse?
I got to my feet rushed to the loo and barfed my heart and lungs up for 10 minutes , when I returned my French boss had gone, he was now convinced he had hired a complete nut?
So to get back to your question, yes some sausages are made from horse meat!

I am a former chef and have no recipes for sausages made with hrsemeat, first of all it is illegal to make it most countrys from non-grade meat, even hot dogs are from inspected animals. Second horsemeat is very lean and would have to be mixed with pork, and it is not cheap.
I know there are a number of US states like New Jersey and in NY city that sell it, but it would be to pricey to make it into sausages, the meat they use is similar to the strip or sirloin in a cow, any other cut would be very tough even from an old plough horse???

I don't think so in the US but back in mainland Europe (not the UK), horse meat is very common and chances are that when you order steak in France or Belgium, it's actually horse meat. I would imagine it's the same way with sausages.

Sausages are usually made of pork and beef. I dont know of any companies using horses. They are too expensive. However, if you were to go back a few years, this would have been common practice.

they can be. they're called paardenworst.
kinda gross though. and im not sure they're sold everywhere. it's taboo in some religions apparently. hahaha. enjoy!
P.S just because it's unthinkable to people dont assume that theres no such thing. i see so many negative responses and i dont think anybody has bothered to check it out.
i went to cooking school and learned about all sorts of different meats used around the world...horse sausage does exist people!

In Germany it is called pferdewurst.
You could probably get horse sausage in Quebec and maybe Mexico, but I think you'd have a hard time in the US and most of Canada.

i suppose it could be possible but i haven't heard of any sausage on the market being made of horse meat. mostly it's from pork or beef by products.

Probably. There's many horse slaughter houses in America, one about and hour or less away from my house. You probably can't find the sausage in our country, but it's big in France.
