I love "O Holy Night" too. Moving words and beautiful music!
I also like "Once in Royal David's City", "O Little Town of Bethlehem" and any carols by the modern composer John Rutter.

I love a song called The Birth of Christ. It's performed by Boyz II Men. Lot of memories there so whenever I hear it, it reminds me of home and brings all those Christmas feelings to the surface.

My one single favorite Christmas carol (I know that is not exactly what you asked, sue me) is Bing Crosby singing Silver Bells.
Tied for second are Bing Crosby and David Bowie singing Little Drummer Boy/Peace on Earth and Peter Gabriel singing Little Drummer Boy.
