Chuck Norris wins, he was an actual full contact karate champion, and has cross-trained in various martial arts including brazilian jiujitsu under the Machados
Stallone is still riped, Rambo 4 is coming soon, Arnold is a flabby politician nowadays.
Van Damme was a shotokan full contact champion, so he wins since I have no idea who Samuel Son is.

Chuck Norris vs. Steven Seagal - are you serious? Norris hands down, all the Chuck Norris jokes aside, he's legit, Seagal kind of is, but Chuck Norris would easily take him even though he's older and probably not in the same weight class.
Stallone vs Arnold would be great, I'd give a slight edge to Stallone because he's still been doing action movies and probably been staying in better shape than the govenator.
Who the hell is Samuel Son? Is that you? Van Damme is a douchebag but obviosuly he'd win.

In a physical confrontation, I am going to go with Norris, Stallone, and Van Damme. However, in a douchbag contest, my money is on Seagal, Arnold and Van Damme.

Of all the ham actors you mentioned in your list above, I'd have to say Stallone is probably the only one who stands a chance of winning an Oscar. He'll pawn everyone on that list in an acting showdown : P
