i usually make such good pancakes,but latley whenever i make them,the second side will turn out to tough to stick the fork thru.lol
why is this happening,what am i doing wrong all of a sundden?

Are you overmixing the batter? Stir it gently, just enough to moisten the dry ingredients. There will be lumps in the batter. Don't worry about them.

Over mixing leads to tough pancakes because the gluten in the flour begins to develop as soon as liquid touches it, and the more you mix, the tougher the gluten becomes.

Instant mix? Cooking to long on one side before flipping.
Homemade could be cause the eggs are larger or smaller, the weather change, different brand of ingredients????

YOU MAY NOT BE USING ENOUGH OIL(vegetable oil) TRY PUTTING SOME OIL IN THE MIX BEFORE MAKING THE PANCAKES THEN USE A ELECTRIC BEATER THIS WILL MAKE THE PANCAKES FLUFFY AND LIGHT THEN PUT SOME VEG. OIL IN A SKILLET AND LET OIL HEAT ON MED OR MED HIGH THEN POUR IN BATTER !!!

Check your griddle heat as well. If they are having to cook too long, that can cause them to be rubbery.
