For Apple, you want Adobe InDesign. Now you will be able to do some very high-end document layout. This is what Macs were made for.
For quickbooks... I'd get a PC. Quickbooks quit supporting Apple. When you switched from PC the MAC, you should have considered your book keeping needs. Fire up that OLD PC again.

I second Scribus for DTP.
Alternative to QuickBooks, Spendthrift 3, free from Apple's download site.
