I think he was going to make another man so that Adam would have someone to go to the pub with. But he ran out of materials when he came to making the twig and berries, so had to do without.

Obviously you must be much wiser than God since you can reason much better than he can.
Must be that God is fake.
Oh... or it could be that he has reasons for postponing things and maybe he doesn't have to justify his decisions to you.
For example, did you ever think that the purpose of delaying Eve was two-fold. First he made her from Adam, so in fact, she was not a seperate creation but an extension of Adam, therefore being "one with him". Second, what did he ask Adam to do: look at all the creatures and name them and Adam did not find any that were suitable to be his companion. Hmmm. Could that have been a learning excercise for Adam? No... you're right. The guy who invented the story was a dope and forgot to say that God made Adam and Eve together.

He probably always knew the prototype (Adam) wasn't going to be perfect so when he built the second model he made some more user-friendly changes. lol
Seriously, if He had any sort of blueprint for the Creation of the Earth he would have known he would have to create a mate for Adam, just as he would have made a long term plan for the continuation of the animal species.

So, God creates animals with their mates, sets up man for reproduction but doesn't give him a mate?
Yes, I'd definitely say that the concept of god evolves as man's perceptions and world view evolves.
Edit:
While the "learning exercise" seems to be a reasonable thing, it sounds more like a rationalization. Think about it, how long does it take the average (straight) male to need a female?

i believe the Bible says that Adam wanted a helper. would have been pretty boring there with all the animals. God knew he would need someone so in his provision for Adam he made Eve. It's not that God made Eve as an afterthought but more that in His plan, he needed someone to be friends with, to populate the Earth, to have fun with etc.

In creating Eve, he was admitting to having made a mistake in the first place by creating only Adam.

God had a programme from the beginig and he had everthing thought out be started creation. how ever you think it was started in the bilble is just laying a foundation for man's logical consideration later since God was starting up a new system entirely. if you want to know God knows everything before hand look at what he told the serpent after the fall of man and what jesus did to the serpent 4000years afterwards. many other confirmations abound even in this present days. just think very well over different occurances.

Women are incomplete without men so it would have made no sense to create her unless Adam already existed.
Also by waiting, God allowed Adam to appreciate her all the more and not take her for granted.

God has the power and ability to see everything, but I think that He just CHOOSES not always access or use that ability.
For instance, while watching a DVD I have the power and ability to fast forward through the movie and get to the end, but wouldn't that ruin the whole movie for me?
God is amazing!
