Ingredients:
1/2 kg milk
2 tbl spoon custurd powder
4 spoon sugar
Garnishing
4-5 garpes
2 pieces apple
1 piece pappaya
and seasonal fruit........
Method
Boil the milk and add the custurd powder in it .Stir it for 10 mins.After that add sugar and freeze it for 1 hour
After freezing mix grapes,apple,pappaya ............. for garnishing
Finally serve it.................

You would need the following ;
1. 12 egg yolks
2. 1 big can of evaporated milk , here in the Philippines , Alpine Evaporated milk is the evap of choice for custard.
3. 1 cup of white sugar
4. one teaspoon vanilla extract
5. 1 tbsp juice of lime (in Philippine we call it "dayap")
5. 1/2 cup brown sugar for caramelizing to line bottom of custard mold.
Procedure :
In a bowl , mix the 12 egg yolks , 1 can of alpine evap milk , use a hand mixer or electric mixer , mix thoroughly .
Then slowly add the sugar at a time , then the vanilla extract and lime juice. Let it rest while you prepare the custard mold with the caramelized sugar at the bottom .
Procedure in caramelizing sugar ;
Place the brown sugar on the custard mold (stainless steel or aluminum preferred)place it on top of a slow fire until it caramelize but not burnt . Move the custard mold so the sugar cover the whole bottom of mold. After it caramelize well , set it to rest .
Transfer the custard mix on the mold with sugar ob bottom , you could make two molds for the mixture prepared.. Place the molds on the bamboo steamer or any steamer .
Set the deep pan or boiler with water on the stove and heat it until there steam , set the bamboo steamer with the molds on top of the boiler and cover . Wait till 30 miuntes and test the custard if it cooked already by putting a toothpick on the custard , if it come out clean then its cook. Steam for another 3 minutes , then let it rest and cool before putting it on the refrigerator . Serve it cold in a round or heart shape plate , inverted so the caramelized sugar is on top .Decorate with some lime leaves and mint on the side.

How to make custard
Ingredients
¾ pint (420 ml) of milk
4 egg yolks
3-4 tbsp of caster sugar
1 vanilla pod
Method
Pour the milk into a fairly large saucepan.
Split the vanilla pod down the middle with a sharp knife and whilst holding the pod over the pan of milk, scrape out the black seeds and add them to the milk. Add the pod itself to the milk also.
Heat the milk over a medium heat until small bubbles begin to appear. At this point, remove the pan from the heat, cover with a lid and set aside for about 15 minutes.
After this time, remove the actual pod from the milk and discard.
In a medium sized mixing bowl, beat together the egg yolks and the sugar until a light and creamy mixture appears.
Prepare a saucepan of hot water and leave on the stove.
Remove the lid from pan containing the milk and vanilla and gradually pour the milk into the egg yolk and sugar mixture in the mixing bowl. Stir continuously whilst adding the milk.
Once all of the milk has been added, place the mixing bowl over the pan of hot water and set to a low heat, ensuring that the water does not boil.
Cook the custard for about 10-15 minutes, stirring constantly until the custard thickens to the desired consistency.
Remove the bowl from the heat and strain the custard through a sieve into a bowl and serve.
540 gm milk to be boiled in the saucepan
60 gm milk to mix with custard powder in a cup
20 gm raw sugar
30 gm custard powder
Pour 90% of the milk (that is, 540 gm) into a saucepan and start heating it.
Put the remaining 10% of the milk (that is, 60 gm) into a cup and add the sugar.
Gradually add the custard powder to the cup while whipping it in well with a spoon.
When the milk is almost boiling, add the custard mixture from the cup gradually, always stirring in well.
Keep the custard cooking in the saucepan until it gets a bit thicker.
Pour out the custard onto a wide plate.
The custard can be eaten hot immediately, or left to cool to room temperature, or else put in the fridge to make cold custard.
Add spices such as cinnamon, nutmeg and allspice for extra flavour.
As everyone knows, the main focus in making custard is avoiding lumps. No one likes lumpy custard. The prevention of lumps requires good mixing in the cup, gradual mixing into the milk, and the milk must be quite hot when you are adding the custard mix from the cup.
Almond Custard Filling

This depends on what you want the custard for. There are many recipes the easiest being buy it ready done if it is just for pouring on your pudding. Yummy!! Make it from custartd powder, milk and sugar just follow the instructions on the tin you can add other things too such as chocolate or green colouring and mint essence - delicious on chocolate sponge. If you are really ambitious you can make it from egg yolks, vanilla pods, double cream and sugar. Be careful though it can curdle and end up like scrambled egg. For a delicious recipe including custard try my black forest trifle. Crumble a chocolate cake into a glass bowl and add some kirsch to moisten - add black cherries and black cherry jelly- leave to set. make up some custard to a thickish consistency and add choloate. allow to cool and poor on top of jelly in dish. Leave to set. Whip up some cream and pour over top. Decorate with chocolate flakes crumbled over the top and some black cherries. Tinned are best as you can use the juice if you can't have the kirsch. ENJOY!!

if you get the birds instant custard it is very simple just follow the instructions.......but actually tesco do a great ready made fresh custard....
