This language is Middle-High German. Your name originated in the fifteenth century. It's meaning "castle-man". "Borch" is related to English/Scottish "burg(h)".
Usually this name was given to men who were in charge of a castle or a small town, when the time of the knights was coming to an end. They were administrators, but not owners.
