Unfortunately, my ways of finding these things with a couple of the employees were told to the them while being written up. I still have a very sly person still working here...she is slick...and I need to catch her better than I have. Our cameras suck at the moment. She has a habit of not ringing drinks up at all...it's hard to hold her to that right now cuz I don't have much of it on video. We also have a small convienience store that I've found close out tapes in the trash that don't match the ones she submits...tells me she is not ringing stuff up but taking the cash and is dumb enough to start to put it on her close out...help me out everyone....:)

ok, ya fire her...good answer...I am in a very small area as it is, dont have a problem firing her, have a problem with the next person I bring in that is just like her...I want to put a stop to ALL of their tricks before they even wall in my door...

I like your comments so far:) let me give you a bit of history about my area...there are only 4000 people in my entire county, and we are the second largest land county in nevada. There are no unions where we live. You can imagine the workforce I have to choose from...Either they have worked for me before or one on my close friends. So...unless you want to work 24/7 all the time you have to try to put up with the b.s. and block them with the problems when you can...

She's going to be fired...it's the when and why. I guess what I was originally asking is tips for how she or someone else is going to screw me since several of my own tracking tricks were told...small area...everyone will be watching...

awesome answer ashlie...I think I could apply this to the store as well (same person works both each shift). maybe make my regulars actually get their reciepts to show to me...or at least ask for them so she has to ring them up...hmmm

My friend owns a bar and had the same problem. He installed touch screen registers where drinks are rung up and the problem was reduced by 90 percent. You cant catch everything but you can get most.

Well first of all fire her, then put a policy into place where you will inventory all of your liquor, beer, wine ect. That way you can compare what has been sold with what you have if your inventory is off make sure your employees are aware that they will either be billed for the difference, or will be fired. Trust me you will have a lot less lost. I've worked in bars and managed bars for 10 years now, that seems to work the best. Just be sure they see you doing the inventory between shifts so they know they're being watched very closely. Also you could start doing the close outs with the bartenders/ cashieers and if the money is wrong make them pay the difference right then and there. Good luck!

You need to come up with some kind of inventory management system. If you dont have a computerized system do something like this:
I like to ring all of the bottle beer on a certain key... you will then have an idea how much of that is walkin out the door.
ring the well and calls on separate keys as well. Then have the bartenders leave the empty bottles aside. All drafts can be rung on there own key as well. While this is not exact it will tell you what is walkin out the door and when. I like to make my orders based on my empty bottles and my inventory should never change.
I have found that most bartenders use find a trick they like and use it over and over.If she is not ringing and pocketing at the end of the shift she is probably keepin a simple tab in her head of even rings or non rings.... (i'll not ring 7 $10 rounds and pocket 70 at the end of the shift). Stop in at closing time and count out the draw if it is $70-100 over.... say hello to your new partner.
Move your bartenders shifts around and notice if the register totals change.
Do not engage your patrons but get an outside proffesional spotter or maybe a retired cop or former bartender to come in and observe. Once you know what techniques they are using you can take a counter measure. Dont let them know they were watched... just make your move to stop the behavior.
Any changes you make in your inventory controls will help because the thieves will be on the alert and may cool it for a while. Accusing or confronting is no good if they think you are on to them they will steal more until they get fired.

Have a bar meeting with all the staff.Tell them customers will be given free tabs to test the staff.(So they don't know who to trust) The scenario is a customer comes in and keeps a tally of how many drinks they had.They pay for it and later management reimburses them for letting them know how their experience was and how many drinks they had.Or at least that is what you tell your bar staff.This way they can't even trust the regulars.It will keep everyone on their toes.You don't really give away free tabs, but it wouldn't hurt to have a friend or family member go in, and see if their #'s match hers or any of the others.Good luck to you!

I like the Idea of rallying the troops to spy on her. Or better yet getting someone you know to be a secret patron and catch her doing that. using the video surveillance I would sit down with your secret patron and get the hole scoop how she does it so you know what to look for. Then ultimately fire her. because you have evidance.

have someone sit at the bar all day and watch her...sounds like she is taking, needs to be someone she does not know...sorry we never had that luxury of tapes that do not match the income...if it does not match we have a serious problem...we had something similar in our restaurant, however it turned out to be the manager...he was fired...
the other thing is, does this happen on shifts she does not work...that will pretty much be able to nail alot of it on her....

Is there a union contract? If not, you can probably dismiss employees at will. You don't have to keep anyone.
