Sounds like you are a resourceful girl. I don't know about the puff pastry but I have never worked with it before...I'm guessing it...PUFFS...and I wonder if it would raise up and dump your innards out of the pie used underneath. You could make a bisquick dough for the bottom part, or use a cornbread mix, or a box of Stove top stuffing for the bottom layer if you have anything like that (pop it in a hot oven for a couple minutes before you cover it with pie filling and it will be toasty). You could use the pastry as a top layer, though.
Different cream soups that are all very good in pot pie: celery, chicken, POTATO (my personal fav, then I don't have to peel and cook them, it's all quicker this way.)
I like ordinary mixed veggies (frozen) in pot pie. These are little cubes of potatos, limas, peas, carrots, and corn. You could use a different blend, like california blend, or stirfry blend, or whatever your fav single ingredient veggies.
You can also add a lot of flavor by adding a gravy or ranch packet and about half as much water as whatever liquid is called for to prepare it.
This dinner, as you can guess will be very carb heavy. I would serve it with a nice green salad or a raw veggie platter...and maybe sorbet or sherbet for dessert.

yeah it would work and it would taste great. funny you should mention it actually, we just made chicken pot pie like that the other day. The rice and chicken would work great with cream of mushroom or even cream of potato soup. and you could also add mixed vegetables, too.
the puff pastry would go great as a pie crust. just cut it into the shape of your pan then put it on the bottom of the pan and over the filling of the chicken pot pie. Don't worry it will only go up so far, be sure to check on it though, and it will be kind of flaky but it tastes great! Don't forget to make four slits in the top of the puff pastry to let the pie breathe. Good luck =)

Yes, that would be a great idea. Use the puff pastry only on the top (it won't cook well on the bottom since it will be saturated with soup). This is how KFC makes their pot pie. You could add veggies or anything else you have leftover too.

I think that sounds good. I'd use the pastry on both the top and the bottom. I'd also add a can of green beans, diced potatoes and a can of corn. Perhaps even a can of cream of chicken along with the cream of mushroom.

Puff pastry on top, a bottom crust is not necessary for pot pie.

Sounds good to me. I would add some frozen mixed vegs to it. When I make chicken pies I always make them pot pies and just put the crust on the top. The bottom always ends up soggy anyway. Seems like a waste of crust to put it there.

yes, you can do all of that. I think I would not use the puff pastery on the bottom, it may get too soggy.
