The main purpose of oil/fats in cakes is to provide a moist and tender texture.

By eliminating the oil, the texture will be a little gritty and the mouth feel would probably be a little dry.

The recipe is liable to fail if you just remove the oil and don't do anything else differently.

Oil (or other fat) is needed for both taste and structure. Some success can be had with substituting apple sauce or other pureed fruit (some people use baby food), but, the cake will be slightly different than the same recipe prepared with oil. If you go this route, you may want to try to match the pureed fruit to the flavor of the cake to some degree.

Unless you're trying to bake a cake for someone on a special diet, I suggest baking the cake essentially as the recipe calls for but eating (or serving) smaller portions of it.

it won't at all be moist. oil is what really helps the cake with that. i always add a little more oil than what it says (not much) and take it out a couple minutes before it says i should to make sure it's really moist. just let it set for a good while. :)

It'll be very dry. You can add something back in to hold the moisture. Like Apple sauce, or pudding.
Oil helps transfer the flavor to your taste buds. You could use butter instead.
But there's got to be something to replace the oil.
