It really depends on what you have. If you have like cheeseburgers/hamburgers left over you can always chop it up and add a thing of mac and cheese to it to make a kinda hamburger helper.

Leftover chicken same thing add some noodles too it with a bit of alfredo sauce. Make sure all the bones are out tho.

Of course, it all depends on what kind of leftovers you have. I always make the most of mine. If it's a meat, such as roast beef, I find something compatible to go with it, like mashed potatoes and peas. For pork, I often add greens (mustard, spinach, etc.), black-eyed peas, and rice. For ham, sandwiches are obvious, but hors d'ourves (sp?) also work well. I put ham cubes on toothpicks with cheese cubes, olives, dill pickles, whatever I have. Turkey is yukky frozen, so the leftovers must be used at once. Sub sandwiches work, but my favorite is Turkey Tetrazinni, a pasta dish made with a wine sauce topped with cheese. Yummy! Chicken is rarely left over at my house, so I can't offer much help there. Hope this helps.

Fried rice. If we have left over white rice, some mixed veggies, and a few slices of ham, it's really yummy to mix it all together and make friend rice. Just fry the white rice in some vegetable oild, add the veggies, cut the ham into small pieces, and add a tablespoon or so of soy sauce. It's easy and it's good.

I can use up almost anything. But my favorite is a simple pot of spaghetti with meat sauce. The next day I put it in a baking pan, top with mozzarella, Parm, asiago, Romano, and black olives. Whack that in the oven and you have a casserole. And then that can be frozen for quick meals.

Reheat it and eat it, or give it to the dog.

And if you are talking about turkey specifically, there are hundreds of great recipes. One of my favorites is to mash up the white meat pretty fine and make turkey salad, like chicken salad, for sandwiches or just on lettuce if you don't want all the carbs.

Make a firm bisquit dough; chop meat, heat somewhat with gravy and chopped vegetables; roll out dough, layer meat mixture on dough, roll up dough from one edge making a meat roll. Place on baking sheet in 400F oven for 15 minutes or until brown. Cut into large sections (3-4"), break top surface when serving add gravy.
Make pizza dough, roll into 1.5-2" balls, then roll out into disks. Place roughly cut pieces of meat with gravy or BBQ sauce as appropriate to meat, vegetables, and rice on half of disk, wet edge of dough, fold over and seal. Poke holes to release steam. Bake until brown. Freeze. Take one or more to work frozen - heat briefly in microwave .
